Healthy Dinner Recipe

## Turmeric-Ginger Tofu and Vegetable Skewers##




Ingredients:

*        1 block extra-firm tofu, pressed and cubed
*        1 zucchini, sliced into rounds


 *        1 red bell pepper, cut into chunks
*        1 yellow bell pepper, cut into chunks
*        1 red onion, cut into wedges
*        For the Marinade:
*        3 tablespoons soy sauce
*        2 tablespoons olive oil
*        1 tablespoon maple syrup or honey
*        1 teaspoon ground turmeric
*        1 teaspoon ground ginger
*        2 cloves garlic, minced
*        Salt and pepper to taste
*        Wooden skewers, soaked in water for at least 30 minutes



Instructions:

1. Prepare the Marinade:

2. Whisk together soy sauce, olive oil, maple syrup or honey, turmeric, ginger, minced garlic, salt, and pepper in a mixing bowl. This is going to be your marinade.

3. Marinate the Tofu:

4. Place the pressed tofu cubes in a shallow dish.

5. Pour half of the marinade over the tofu cubes and coat thoroughly.

6. Allow the tofu to marinate for at least 30 minutes, or longer if desired.

7. Prepare the Vegetables: While the tofu is marinating, cut the zucchini, bell peppers, and onion into thin slices.

8. Place the Skewers Together: Thread the marinated tofu cubes and prepared vegetables alternately onto the soaked wooden skewers.

9. Grill or bake: Grill the skewers for 10-15 minutes, turning occasionally, on a preheated grill or grill pan over medium-high heat, until the tofu is golden and the vegetables are tender.

10. Alternatively, bake the skewers in the oven for 20-25 minutes, turning halfway through, at 400°F (200°C).

11. Serve: Remove the skewers from the grill or oven once they are cooked.

12. Before serving, brush the skewers with the remaining marinade.

13. Serve the Turmeric-Ginger Tofu and Vegetable Skewers with rice or quinoa, if desired garnished with fresh herbs.
